From ribeyes to slow-cooking favorites, here are the choices on our freezer beef cut sheet.

Steak and ribeye thickness: ¾″, 1″, 1¼″ or 1½″.
Cut selections are subject to the processor and your share. Quarters from the same side must have matching cutting instructions. Some choices replace other cuts; selecting extras can change the amount of ground beef.
Estimated packaged beef from a 1,000–1,100 lb calf at live weight.
These rounded planning ranges assume 60–65% of live weight becomes hanging weight, then 60–70% of hanging weight becomes packaged beef. Actual amounts vary with the animal, trimming and bone-in or boneless selections. Beef is priced at $6 per lb of actual hanging weight, plus processing and kill fees.
